All recipes in this book have been prepared, cooked, eaten, and shared by trainees at LandWorks and/or by prisoners in jail.
There is something about lunch at LandWorks, which is more than the food, but also definitely about the food. From that very first day in summer of 2013, with everyone sitting and eating together around a table for lunch (even if it was rickety old fold-up picnic table and some moth-eaten folding chairs), it was clear that this would be at the heart of the project; a useful means of bringing people together, introducing visitors to the project and of course socialising with trainees. As Grayson (LandWorks trainee) says:
“I must admit lunchtimes are the highlight of my day really. Not just for the food as such, I think Nolan sort of struck it on the nose yesterday, when we got back [to the prison] he said it was like sitting there with a big family and he really liked it. He’d missed that.”
